Charmat Method

The Charmat Method, also known as the Tank Method, is a more modern and efficient process. In this method, the secondary fermentation occurs in large stainless-steel tanks rather than individual bottles. Once the fermentation is complete, the wine is filtered to remove sediment and then bottled under pressure.
